Gluten Free Friday | Jumbo Chocolate Chip Cookies
I recently met a new Twitter friend and she just happens to live near me! With over 175 million users on Twitter, I always get a bit giddy when I actually connect with someone who is local to me. @Alyce4Him has a blog called Pots on the Stove where she shares recipes and stories about her life. Her last blog post was for a gluten free recipe of Chewy Jumbo Chocolate Chip Cookies. Could it be true? A gluten free cookie that was not only large, but chewy??! I had to find out for myself.



Here is Alyce's recipe and one I highly recommend. As you can see from the photos, these gluten free cookies don't deflate when you take them out of the oven, nor do they crumble into millions of tiny, dried out pieces. The hubs and I made ice cream sandwiches with them and will be sharing them with family this weekend as well. This recipe is a keeper!
Ingredients:
4 1/4 Gluten Free All Purpose Flour
1 tsp xanthan gum
1 tsp baking powder
1 tsp baking soda
1 1/2 cups butter, softened
1 1/4 cups sugar
1 1/4 cups packed brown sugar
2 eggs
1 TB vanilla
12 ounces of chocolate chunks
Directions:
Heat oven to 375 degrees. Combine flour, xanthan gum, baking powder and baking soda. Set aside.
Combine butter and sugars and beat at medium speed until creamy. Add eggs and vanilla. Continue beating until well mixed. Reduce speed to low and gradually add flour mixture. When well mixed, stir in chocolate chunks.
Drop dough by 1/4 cupfuls, 2 inches apart, onto ungreased cookie sheets. Bake for 10 to 14 minutes. Mine were perfect in 14. Remove when they are lightly golden brown. Let stand for a few minutes and then move to a cooling rack.
